Gnocchi, Sausage and Peas
Ingredients⌗
- 1 lb package gnocchi
- 10 oz. frozen peas
- 1 lb mild Italian sausage
- 3/4 cup grated parmesan
- 3 teaspoons lemon juice
Directions⌗
- Fill a medium pot half way with water. Salt the water generously and bring to a boil
- While waiting for the water to boil brown the sausage in a 12 inch skillet.
- When the sausage is almost done, add the gnocchi to the water. Make sure to break up any chunks so they don’t stick together.
- Reserve a cup or two of the pasta water and drain the gnocchi when they float.
- Add gnocchi to the sausage skillet and mix together.
- Add peas and some of the pasta water. Mix throughly.
- Add parmesan cheese and lemon juice.
- Continue mixing until the cheese melts and the resulting sauce is creamy.
- Add salt and pepper if needed.
